Gimme, Gimme all the Waffles <3

Because Waffles = HAPPINESS!

Those who really know me, or let’s face it, those who follow me on Instagram know that I am utterly, completely, profoundly obsessed with waffles. I pretty much eat waffles everyday for breakfast. Breakfast is, after all, the most important meal of the day and being so it should consist of something incredibly delicious and satisfying. My love of waffles has taken me to experience with different recipes, most of them healthy but all of them delicious!!! 

I have found that I'm a person of obsessions, not a crazy person I promise, but once I try something and I like it, I kinda stick to it for a while until it gets old and I feel it's time for something new. The recipe that I want to share with you now, is my current obsession when it comes to waffles. I legit go to bed thinking about these, and even though they take a little while to prep (about 15 min from start to first bite), they are literally heaven… at least for me they are LOL. 

It is healthy waffle, but I promise that it tastes just as good as any… maybe even better and they’re not only good for the soul but for the body as well, as they are full of yummy nutrients and delicious ingredients. 

Ingredients: 

  • 1/4 cup Egg Whites
  • 1 tbsp Almond Flour 
  • 1 tbsp Coconut Flour
  • 1/2 Scoop Protein Powder ( I use Quest Nutrition's Salted Caramel, but feel free to use any powder that bakes well)
  • 1 tbsp Flaxseed Meal 
  • 1 tbsp Oats
  • 1 tsp Maca Powder 
  • 1-2 Stevia Packets
  • 2 tbsp Almond Milk 
  • A pinch of salt (the salt will make the sweet flavors pop)
  • A pinch of Baking Powder 

Instructions:

The procedure for making these is as easy as cake… I think that’s how the saying goes. Anyways, start by putting everything in a small bowl (egg whites first and then all flours and add-ins). Then with a spoon mix everything thoroughly and slowly add in the almond milk depending on the thickness of the batter. In the end, you want something that assimilates a cake/pancake batter. Once that is ready, set aside and pre-heat your waffle iron. Once this is ready to go, spray a bit of non stick coconut oil and pour your waffle batter in. I love to put in blueberries, and chocolate chips into mine before closing the waffle iron, but this is all up to you. Now, time to be patient and wait until the green light indicating that waffle heaven is ready turns on. 

Once you got your waffles out it’s time to get creative with toppings!!! Anything goes really, the sky is the limit, but I thought I would give you some ideas 😃 

My go to toppings are: 

  • Siggi's 0% Plain Yogurt
  • Hemp Seeds
  • Lily’s Unsweetened Chocolate Chips
  • Purely Elizabeth’s Chocolate Sea Salt Probiotic Granola
  • NuttZo 7 Nut & Seed Butter
  • Blueberries
  • 1/2 Apple (microwave for 2 min w/cinnamon and Truvia)
  • Ceylon Cinnamon (Don’t ask me why but I know this is the better cinnamon for the body lol)

*Literally all the toppings at the same time! #foodgasm

Now don’t waste time and go make these ASAP. If not having a waffle maker is the issue, I’m pretty sure that they will come out just as yummy in pancake form.
